In addition to seeking out old vines and using indigenous grapes, Michael likes to innovate. The wine is made with the care and detail like that of a Champagne, hand harvested using small baskets and whole-bunch lightly pressed into concrete. It has a fine sunset color and is surprisingly fresh and crisp on the palate. It is a perfect match for raw courses and citrus dishes.
